How can I make the background or unwanted parts of a photograph transparent in Photoshop?

For example, how could I take a picture of an athlete on a sports field and crop out everything around the athlete and his/her body and make it transparent?

Links and picture tutorials are helpful, as I'm not the greatest Photoshop user, obviously.

Use the magic wand on the part you want gone, and press delete when youve selected it.

Yeah take the eraser tool or the magic want tool and select what you want deleted and push delete, and if it turns to checkered white and light Grey squares then its transparent. But not all files can be transparent, I know gif files cant be transparent....
